At New Chitose Airport, you’ll find the Hokkaido Ramen Dojo, a place where various Hokkaido ramen styles come together. From renowned ramen shops across Hokkaido to exclusive airport-only establishments, this dojo offers a diverse range of Hokkaido ramen for you to enjoy.
Hakodate Menchubo Ajisai
We visited Hakodate Menchubo Ajisai, a ramen shop that has been around for over 70 years and is known for its Hakodate salt ramen. You can only find it in Hakodate, New Chitose Airport, and Sapporo. It’s customary to order a simple bowl of ramen and add your choice of toppings.
This time, I ordered the ShoyuRamen in a large serving. The Shoyu Ramen costs 780 yen, and adding extra noodles costs 100 yen. It’s quite affordable for a simple yet delicious dish.

One bite, and you’ll notice the smoothness of the noodles. This is the taste of their special straight noodles.
The richness of the chashu pork is remarkable. I’ve never had chashu like this before.
Now, a taste of the soup. Among all the Shoyu Ramen I’ve had, this one is exceptionally refreshing.
But it’s not just about the noodles, soup, and chashu; there’s more to it. The green onions, watercress, and bamboo shoots are all incredibly fresh. The freshness of these vegetables is truly remarkable.
Pan-Fried Dumplings
We also enjoyed a plate of 5 pan-fried dumplings. These dumplings are generously filled and have a delightful texture. We enjoyed them with vinegar, chili oil, and soy sauce.
The chili oil is homemade Ezo chili oil, and it adds a great flavor.
